Sunchokes, also known as Jerusalem artichokes, are a perennial relative of sunflowers that produce edible tubers. The tubers are a wonderful substitute for potatoes and have an earthy, nutty flavour.
‘Beaver Valley Purple’ is a unique purple skinned Heirloom variety from Beaver Valley, Pennsylvania. From summer to autumn, the plants are graced by bright sunny flowers.
Once sunchokes have been planted in the garden, they seem to show up year after year. Here at Nested, we grow them in large pots to prevent them from naturalizing in our garden beds. They are incredibly easy to grow.
Notes: Harvest tubers when the flowers start to fade from the first frost.
Water | Drought tolerant but will produce more tubers with consistent water. |
Soil | Prefers well draining soils rich in organic soil amendments but will grow in a wide range of soils. |
Light | Prefers full sun (over 8 hours a day). Can also be grown in part shade but tuber production will not be as high. |
Form | 10 ft. tall and 4 ft. wide. |
