Here at Nested, bronze fennel is grown for its moody, ephemeral, dark plumes. The red-burgundy tinged foliage is as beautiful as is useful in the kitchen. The licorice flavoured foliage is wonderful in salads and for making tea.
Fennel spreads very quickly by casting seeds. To prevent the takeover of tiny bronze fennel seedlings at the nursery, we cut back the flowers before they go to seed.
